Quick Pasta


Cooking on a budget, pasta is the way to go. Pasta is affordable pantry staple, endless versatile.


Ingredients:
8 oz spaghetti 
1 pound ground beef 
1 onion, chopped 
salt and pepper, to taste 
1 tablespoon Italian seasoning 
1 - 14 oz can stewed tomatoes 
1 - 6.5 oz can mushrooms 
1 - 24 oz pasta sauce 
1 tablespoon minced garlic 
1 tablespoon Worcestershire sauce.
1 tablespoon olive oil 

Directions:
In large skillet over medium heat, add oil, add ground beef, onions, salt, pepper and Worcestershire sauce, crumble meat. Cook pasta according to package directions. Drain pasta and return pasta to the pot, add remaining ingredients. Stir well.

Blue Catfish


Blue catfish is fresh water, found in Mississippi, Missouri and Ohio. Known for blue gray. Can grow up to 100 pounds and great for dinner.

Ingredients:
2 blue catfish fillets
salt and pepper
1 tablespoon garlic herb seasoning
1 egg
1/2 cup bread crumbs
2 tablespoons butter

Direction: 
season fish and egg with salt and pepper. season bread crumbs with garlic herb seasoning. melt butter in skillet over medium heat. Cook fish until it flacks.

Macaroni Cheese Hot Dogs


Check out this pleasing meal. Easy and fast. Ready in minutes.

Ingredients:
1 box macaroni and cheese (I used Velveeta)
1/4 cup cheddar cheese
5 hot dogs

Directions:
Cook macaroni cheese according to package direction. Meanwhile, cook hot dogs. Drain macaroni and place back into pan. Add both cheese and stir well. Slice hot dogs and place in macaroni and stir well.

Nooga Side Dish Salad


Easy salad to make and fast. Perfect for side dish for any meal.

Ingredients:
1 cup shredded lettuce or more
1/2 cup cheddar cheese
real bacon bits to to taste
cheese garlic season croutons to taste
1/2 teaspoon onion powder
ranch dressing to taste

Directions: 
Add all ingredients to bowl and toss. Serve.

Homemade Salisbury Meatballs


Spin off of salisbury steak. Slow cooked salisbury meatballs. Perfect over mashed potatoes or noodles. 

Ingredients:
1 pound ground turkey
salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon soy sauce 
1 onion, sliced
1 - 4 oz can mushrooms
1 package brown gravy
1 cup beef broth
1/4 cup bread crumbs
1 egg, beaten

Directions:
Spray crockpot with cooking spray. Add onions and mushrooms, stirring. Stir in broth. In large bowl, add meat and remaining ingredients. Mix well. Shape meatballs in 1 to 1 1/2 inch. Place meatballs on top of onions and mushrooms. Cook on low for 4 to 5 hours, until meatballs are cooked, (165 f).

Penne Pasta Salad

This pasta salad perfect for any gathering. Start chopping while pasta cooking.

Ingredients:
6 oz penne pasta
1 large tomato, seeded and diced
1 small red onion, diced
2 green onions, diced
1/4 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/4 cup mayonnaise
1/4 cup ranch dressing
1/4 cup cheddar cheese, shredded

Directions:
Cook pasta according to package directions. Drain and rinse. Mix all ingredients together.

Smokey Chicken Salad


This might be best chicken salad I made. My boyfriend loves it. If it a try.


Ingredients:
3 leftover chicken drumsticks, remove skin and chop
4 slices bread
Mayo, to taste
1/4 cup cheddar cheese
1 claussen spears, finely chop
1 green onion, chop
1/4 cup bacon, finely chop
8 oz italian dressing

Directions:
Put 8 chicken drumsticks in a zip lock bag, add dressing and place in refrigerator for 1 hour. Cook on grill, until done. Next day, take 3 drumsticks, remove skin and chop. Place in bowl and add remaining ingredients , except bread and italian dressing. Mix well. Place chicken salad on bread and enjoy.

Juicy Chicken Quarters


Chicken quarters are still reasonable at the store. Prep is easy. 

Ingredients:
2 chicken quarters
1 tablespoon olive oil
1 teaspoon melted butter
salt and pepper, to taste
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon paprika

Direction:
Preheat oven to 400. Combine spices. Brush each side with olive oil and melted butter. Add spice mixture to both sides. Cook about 30 to 35 minutes. Chicken done when no longer pick. Internal temp 165.
