After eating a lot at the holidays, people start the New Year wanting to change their diet. I thought about getting some salad in me. I love salad anytime of the year. Making salads is an easy way to get some veggies into your diet. If desire, you could add salami to make it a little more like Italian style salad. I love making my own salad dressing, much better than store bought.
This salad is layered with so much delicious flavor. Crisp lettuce, tomatoes, hard boiled eggs, green onions and leftover rotisserie chicken. Toss with homemade italian dressing.
Rotisserie Chicken Salad with Homemade Italian Dressing
Recipe by Christine Lamb @ Christine's Pantry - 2019
Ingredients:
1/2 cup extra virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 1/2 tablespoon italian seasoning
1/2 paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sugar
2 cups shredded lettuce
2 cups chicken, chopped
1 large tomato, seeded and diced
2 green onions, chopped
2 hard boiled eggs, chopped
shredded cheese, use your favorite
Directions:
Make the dressing: In a jar combine the first 8 ingredients, place a tight fitting lid on jar, shake vigorously, until well blended.
To make salad: Place salad ingredients on individually plates. Pour dressing on salad, and serve immediately.
