Chicken And Rice Wrap


 Easy and delicious.

Ingredients

1 64 oz 4 cheese rice a roni

1 12.5 can chicken, drain

4 flour tortilla

Direction

Cook rice a roni according to direction

Add chicken, stirring. Add mixture to to tortillas. Fold sides and roll.

Smokey Chicken Salad


This might be best chicken salad I made. My boyfriend loves it. If it a try.


Ingredients:
3 leftover chicken drumsticks, remove skin and chop
4 slices bread
Mayo, to taste
1/4 cup cheddar cheese
1 claussen spears, finely chop
1 green onion, chop
1/4 cup bacon, finely chop
8 oz italian dressing

Directions:
Put 8 chicken drumsticks in a zip lock bag, add dressing and place in refrigerator for 1 hour. Cook on grill, until done. Next day, take 3 drumsticks, remove skin and chop. Place in bowl and add remaining ingredients , except bread and italian dressing. Mix well. Place chicken salad on bread and enjoy.

Juicy Chicken Quarters


Chicken quarters are still reasonable at the store. Prep is easy. 

Ingredients:
2 chicken quarters
1 tablespoon olive oil
1 teaspoon melted butter
salt and pepper, to taste
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon paprika

Direction:
Preheat oven to 400. Combine spices. Brush each side with olive oil and melted butter. Add spice mixture to both sides. Cook about 30 to 35 minutes. Chicken done when no longer pick. Internal temp 165.

Ranch Chicken Wrap

Do you need a quick easy dinner? Chicken wraps are your friend. I had left over chicken so this was easy. Time saver. You could use rotisserie chicken. 

Ingredients:
2 cooked chicken breast, cut into bite size pieces 
2 large flour tortillas
1/4 cup ranch dressing
1/2 cup shredded lettuce
1 medium tomato, sliced thin
1/2 cup shredded cheddar cheese
Sprinkle real bacon bits

Directions:
Place two flour tortillas on flat surface.  In bowl mix chicken and ranch dressing. Add chicken mixture to center of flour tortillas. Add lettuce, tomatoe, cheese and bacon bits? Fold the sides of tortillas and roll.

Chicken Tetrazzini


 I like to know a little about the dish I'm making. This dish is named after a Italian opera star. It's believe that Chef Ernest Arbogast in California created this recipe. Other sources attribute the orgin in New York City. The chicken tetrazzini was made famous by Chef Louis Paquet. 

Ingredients : 
2 chicken breast, cooked and cut into bite size pieces 
salt and pepper to taste 
1 tablespoon minced garlic 
1 small onion, diced 
1 - 8 ounce can cream of chicken soup 
1/2  cup chicken broth 
1 cup sour cream 
4 ounces spaghetti 
8 ounce can mushroom, drained 
5 ounces mozzarella cheese, shredded 
1/2 stick butter 
parsley, garnish

Directions:
Cook pasta according tlo package directions. Drain well. 

In skillet over medium heat, melt butter, add onions, salt and pepper.  Add remaining ingredients except sour cream, pasta, cheese and parsley. Heat through. Add sour cream, pasta, cheese. Stir well. Garnish with parsley.

Baked Cheez It Chicken

Not sure why it took me so long to use Cheez It's as breading mixture. It adds a ton of cheesy flavor to the chicken. After the chicken was coated with Cheez It's I spray cooking spray, it helps to get the crust crunchy.

Debo's Buttermilk Fried Chicken



Louisiana "The Original" Hot Sauce has been mass produced by Bruce Foods Corporation for over 80 years. As a cayenne pepper based hot sauce, it is similar to other mass produced brands such as Crystal Hot Sauce, Texas Pete and Frank's Red Hot. It is usually packaged in 6 oz. shaker bottles, and sports a yellow, blue and red label. Bruce has marketed the sauce as 'Not too hot, not too mild.

Chicken Tetrazzini

Luisa Tetrazzini (1871-1941), called “The Florentine Nightingale,” was a world renowned opera star who was a favorite of San Francisco audiences. Chefs often named dishes for prestigious clients at their restaurants.

But just what chef she inspired remains in doubt. One theory has the chef at the Knickerbocker Hotel in New York City, Mr. Pavani, creating the dish to honor Luisa Tetrazzini’s January 1908 New York debut singing Violetta in La Traviata. It is likely she stayed at the Knickerbocker at Broadway and 42nd Street; many opera singers in that period did, and in fact Enrico Caruso became a resident, moving his family there to be near the Metropolitan Opera. Although the Knickbocker no longer exists, one can still find a locked door at the Times Square subway station platform with the name Knickerbocker above it, where at one time a stairway led from the subway up to the lobby of the hotel.

A few historians claim that master French chef George Auguste Escoffier invented Chicken Tetrazzini, but it is not mentioned in his cookbooks. Some sources say that a recipe for Chicken Tetrazzini appears in the Christian Science Monitor in October 1908, and in the Chicago Tribune in 1911. Various other people claim their relatives invented it at the turn of the 20th century.

Supporting San Francisco’s claim to the recipe is James Beard, who believes that the dish was created at the Palace by Chef Ernest Arbogast. Arbogast, who retired after twenty years of service at the Palace, is also know for creating Oysters Kirkpatrick... oysters dipped in a sauce of ketchup and butter, covered with bacon, topped with Parmesan cheese, and baked. That 1900 invention is named in honor of hotel manager Colonel John Kirkpatrick.

It is possible he created Chicken Tetrazzini in 1904 when Tetrazzini sang to great acclaim in San Francisco and was featured in daily articles in the San Francisco Chronicle. Or maybe Arbogast gave the dish its official name after the 1908 New York debut when Tetrazzini had a second triumph in San Francisco. Another possibility is that the dish was premiered after Tetrazzini gave her famous outdoor Christmas Eve concert in 1910 before an estimated quarter of a million people at Lotta’s Fountain. That concert came about when two New York impresarios began feuding over which controlled her New York opera contract. When they attempted to get an injunction to prevent her singing in any theater until their legal squabble was settled, Tetrazzini, who loved the worshipful audiences in San Francisco, headed to the City vowing to sing in the streets if she had to. Although no injunction was issued, she carried out her promise with the open air concert that has become legendary.

Chicken Tetrazzini

Ingredients:
2 cups uncooked spaghetti
1 small onion, chopped
1 teaspoon salt
1 teaspoon pepper
1 (9.5 oz) can chicken, drained
1 (10.5 oz) can cream of chicken soup
1 (10.5 oz) can cream of mushroom soup
extra virgin olive oil, just enough to cover bottom of pan
Mozzarella cheese, sprinkle

Directions:
Cook spaghetti according to package directions. In a large skillet, add olive oil, and heat over medium heat, add onions, salt and pepper. Cook onions until tender. Add cream of chicken soup, cream of mushroom soup and chicken. Mix well. Once spaghetti cooked, drain well. Add spaghetti to chicken and mix well. Spray 13x9 baking pan with nonstick cooking spray. Add chicken and noodles to baking pan. Sprinkle with Mozzarella cheese. Preheat oven to 350 degrees. Cook about 15 to 20, until cheese has melted and bubbly. Enjoy!

The modern chicken is a descendant of Red Junglefowl hybrids along with the Grey Junglefowl first raised thousands of years ago in the northern parts of the Indian subcontinent.

Chicken as a meat has been depicted in Babylonian carvings from around 600 BC. Chicken was one of the most common meats available in the Middle Ages. It was widely believed to be easily digested and considered to be one of the most neutral foodstuff. It was eaten over most of the Eastern hemisphere and a hunter of different kinds of chicken such as capons, pullets and hens wre eaten. It was one of the basic ingredients in the white dish, a stew usuall consisting of chicken and fried onions cooked in milk and seasoned with spices and sugar.

Chicken consumption in the USA increased during World War II due to a shortage of beef and pork. In Europe, consumption of chicken overtook that of beef and veal in 1996, linked to consumer awareness of Bovine spongiform encephalopathy or B.S.E.

Ingredients:
4 boneless skinless chicken breast
1 cup Italian salad dressing
grated Parmesan cheese, for garnish
1/2 teaspoon salt
1 teaspoon pepper
parsley, for garnish

Directions:
Preheat oven to 350 degrees. Grease a baking dish. Add chicken to a resealable bag, Italian salad dressing, salt and pepper. Making sure to coat chicken. Place chicken in baking dish and cook for 25 to 30 minutes, or until chicken no longer pink in center. Garnish with cheese and parsley. Enjoy!

Easy Cheezy Chicken & Rice Casserole

Is it hard for you to make a good looking casserole? I have tried many times to make a good looking casserole. I'm thinking maybe that might never happen. The casserole I have for you today taste great. Yummy! Appearance is another story. Maybe that's why cheese so popular in casseroles. The smell is wonderful. I do love a good casserole. They are easy, feed the entire family, affordable. Casseroles freeze well.

There are over 40,000 varieties of rice. Rice is a staple food for more then 50% of the world population. Rice is grown in every continent except Antarctica.

Ingredients:
2 cans chicken breast, drained
2 cups cooked rice
1 1/2 cups finely shredded cheddar cheese
1 (10.5 oz) can cream of chicken soup
pinch salt
1 teaspoon pepper

Directions:
Preheat oven to 350 degrees. Add ingredients in large bowl. Mix well. Pour into greased 3 quart casserole dish. Bake about 15 minutes. Enjoy!

BBQ!... I'm there! I love a good BBQ anytime. There is no such thing as a bad BBQ. BBQ is pretty much heaven on a bun. Every region has their own way of BBQ. The recipe I have for you today is a bit different from the usual BBQ. Quick and easy. I added liquid smoke... love it!

The power of kindness
It’s easy to act with kindness and understanding toward those who have been kind to you. Yet the real power of kindness comes when you give it even to those who don’t deserve it.

Acting with cruelty in response to cruelty only drags down everyone involved. With kindness, you have the opportunity to lift up yourself and others. Being kind does not mean allowing others to take advantage of you. On the contrary, your kindness can give you the positive, undeniable power to make sure that everyone’s best interests are served.

Yes, there are those who will not respond well to your kindness. Act toward them with kindness and understanding anyway, and even though they won’t benefit from your kindness, you yourself still will.

Think of your kindness toward others as a valuable gift you give mainly to yourself. If anyone else is enlightened enough to accept and appreciate it too, that makes it even better.

Ingredients:
2 cans chicken breast, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 garlic powder
1/2 teaspoon liquid smoke
1 bottle honey BBQ sauce
4 toasted onion buns

Directions:
In a bowl, add chicken, garlic powder, liquid smoke, salt and pepper. Drizzle BBQ sauce over chicken Mix together. Add chicken to buns. Enjoy!
