No need for Chinese take out when you can cook your own at home.
Chicken Fried Rice
Recipe by Christine Lamb - 2016
Ingredients:
1 cup jasmine rice
1 1/2 cups cooked chicken, chopped
1 cup peas
1 onion, chopped
2 celery stalks, diced
salt and pepper
1 teaspoon garlic, minced
2 tablespoons soy sauce
1 egg, beaten
1/4 teaspoon crushed red pepper
1 tablespoon olive oil
1 tablespoon butter
Directions:
In a skillet heat oil and melt butter over medium heat. Add onions, celery, salt, pepper and crushed red pepper, cook until crisp tender, about 5 minutes. Move vegetables to the side of skillet and stir in beaten egg, stir until set. Add chicken, peas, garlic, rice and soy sauce, stir well and cook about 5 minutes, or until heated through.
