Hearty soup and extra satisfying.
Bacon, Chicken and Potato Soup
Recipe by Christine Lamb @ Christine's Pantry - 2018
Ingredients:
6 slices bacon, chopped, reserve 1 slice for garnish
2 chicken breast, cut into bite size pieces
4 large potatoes, peeled and quartered
salt and pepper
1 tablespoon chicken spice blend
1 teaspoon celery seed
1 onion, chopped
1 tablespoon garlic, minced
3 green onions, chopped and reserve 1 chopped green onion for garnish
4 cups chicken broth
Directions:
In stockpot, cook bacon over medium high heat, until crisp. Remove bacon to a paper towel line plate. Don't drain bacon fat. Season both sides of chicken pieces with salt, pepper and chicken blend. Add to stockpot, cook until no longer pink.
Add onions, potatoes and chicken broth. Stir in celery seed and garlic. Bring to gentle boil, reduce heat and simmer for 30 minutes, until potatoes are tender. The last 15 minutes cooking, stir in cooked bacon and green onions. Garnish with bacon, green onions and cheese.
