Cheese Tomatoes With Zucchini


Many people feared tomatoes for more than 200 years. People thought the tomatoe was poison.  

Zucchini is part of the gourd family. Native to Central America and Mexico. Zucchini is grown in United States during the warm season. 

This is a easy side dish. Delicious! You don't have to put as much green onions as I did. Chopped red onions would be good. Onion powder would  be good. 


Cheese Tomatoes With Zucchini 
Recipe By Christine at Christine's Pantry 

Ingredients:
2 tomato, sliced
salt and pepper 
1 tablespoon garlic powder 
2 tablespoons Parmesan Cheese 
Dizzle Italian Salad Dressing 
Slice Green Onions, 2

Directions:
Slice tomatoes and add remaining ingredients. Place on plate. 

In separate skillet over medium heat, add sliced zucchini, salt and pepper to taste. Cook until tender.

Roasted Roma Tomatoes


Roma tomato or Roma (the "Roma VF" variant is most common in seed catalogs as of 2007) is a plum tomato that is commonly found in supermarkets. The tomato is a meaty, egg- or pear-shaped tomato that is available in red and yellow. It has few seeds and is a good canning and sauce tomato. While Roma is an open-pollinated variety, in general it is not considered an heirloom tomato. Roma tomatoes are also known as Italian tomatoes or Italian plum tomatoes.

Black Bean Salsa

The family Leguminosae (legumes) includes beans, peas, lentils, peanuts, carob, tamarind and Acacia and many other trees. Their use as a source of food  is second only to the cereal grains. The common bean Phaseolus vulgaris (vulgaris is Latin for common) is a member of this family, and Black beans are  one of hundreds of varieties of the common bean. Black beans are used dried; originally the drying of beans was a way to ensure a winter food supply, as  beans can be successfully dried and stored for up to a year, with hardly any fear of deterioration or damage.

Black beans grow best at temperatures between 65 and 75 degrees F. They are a  warm season crop, requiring up to 120 days to reach maturity and dry. The beans  are left on the plants to dry, so humidity and heat can cause damage to the beans as they are drying on the plant, and rain can be a problem during the  drying and curing process. They are harvested by machine, and the plants themselves left as 'green manure'.

Black Bean Salsa

Ingredients:
2 (15oz) cans black beans, drained and rinsed
1 (15oz) can dices tomatoes
1 small red onion, finely chopped
1 tablespoon cilantro
salt and pepper, to taste
1/2 teaspoon cumin
1 teaspoon garlic powder
1 heaping teaspoon minced garlic
2 jalapenos, remove seeds and finely chopped

Directions:
Mix all ingredients in a large bowl. Use immersion blender, puree beans. Cover and chill until ready to serve. Enjoy!

Note: If you don't have a immersion blender, use your food processor, that will be fine.

Did you know that tomato is a fruit? Yes, that's right tomato is a fruit, but consider a vegetable for culinary purposes. Tomatoes are one of the most common garden fruits in the US.

The earliest signs of tomatoes being grown is 1710, when herbalist William Salmon reported seeing them in what is today South Carolina. It is possible that some people continued to think tomatoes were poisonous at this time, and were grown more as ornamental plants than as food.

About 130 million tons of tomatoes were produced in the world in 2008. China, the largest producer, followed by US. California accounts for 90% of US production and 35% of world production.

Tomato Salad

Ingredients:
1 pint grape tomatoes, cut in half
1 small vidalia onion, thinly slice
11/2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 1/2 teaspoon dried basil
mozzarella cheese, shredded

Directions:
Cut tomatoes in half and place in bowl. Add onion, olive oil, salt, pepper and basil, toss well. Sprinkle with cheese. Enjoy!
