Broccoli Medley


Broccoli is very healthy. Cauliflower is just as healthy as broccoli. Carrots are good for you. 

Ingredients
3/4 cup broccoli
3/4 cup cauliflower
10 baby carrots
2 tablespoons butter
1 tablespoon olive oil

Direction
boil veggies. meanwhile add butter and olive oil in sauce pan over medium heat. Drain veggies. add vegetables to pan cook until tender.

Cheese Broccoli


Easy and yummy! Perfect for someone just starting in kitchen.

Ingredients: 
1- 10 oz frozen broccoli, thawed
1- 8.75 oz can corn, drain
3/4 cups cheddar cheese
4 tablespoon, melted butter
salt and pepper to taste
1 teaspoon garlic herb seasoning

Directions: 
Cook broccoli to package directions, drain and place back into pot. Add remaining ingredients, stir well.

Pasta and Broccoli with Garlic Butter Sauce

Choose broccoli with floret clusters that are compact and not bruised. They should be uniformly colored, dark green and with no yellowing. They should not have any yellow flowers blossoming through, as this is a sign of over maturity. The stalk and stems should be firm with no slimy spots appearing either there or on the florets.

Place broccoli in a plastic bag, removing as much of the air from the bag as possible. Store in the refrigerator where it will keep for 10 days. Do not wash broccoli before storing because exposure to water encourages spoilage. Leftover cooked broccoli should be placed in tightly covered container and stored in the refrigerator where it will keep for a few days.

Broccoli With Stuffing

Ingredients:
2 (16 oz.) packages frozen chopped broccoli, thawed
2 eggs, beaten
1 onion, finely chopped
1 can mushroom soup
1/2 cup mayonnaise
1 cup grated cheddar cheese
1 cup butter, melted
1 (10 oz.) package herb stuffing mix

Directions:
Cook the broccoli according to package directions. Preheat oven 350 degrees. Spray 2 quart casserole dish with your favorite non stick cooking spray. In a bowl combine eggs, onion, soup, mayonnaise, set aside. Place layer of cooked broccoli in 2 quart casserole dish. Add layer of cheese. Pour small amount of sauce over the top of cheese. Repeat layers until all are used. Top with stuffing mix (do not stir). Drizzle butter over top of stuffing. Bake for 30 minutes. Enjoy!
