Potato Flake Fish with Parsley Potatoes

If tilapia is not your choice of fish by all means go ahead and substitute another white flesh fish for this recipe.

Potato Flake Fish with Parsley Potatoes

Ingredients:
1 large egg
2 tablespoons water
3/4 cup potato flakes
3 tablespoons crushed french fried onions
3 tablespoons parmesan cheese, grated
1 pound white fish (I used tilapia)
1/3 cup vegetable oil
salt and pepper
4 large potatoes, quartered lengthwise
3 tablespoons butter
4 tablespoons chopped parsley

Directions:
Add potatoes to salted water. Bring to a boil, until fork tender. Drain and return potatoes back to pot, add butter salt, pepper and chopped parsley.

Heat oil in deep skillet.

In a shallow dish beat eggs and water. In a separate dish, add potato flakes, crushed french fried onions and cheese, mix well. Season both sides of fish with salt and pepper. Dip fish in egg and than potato flake mixture. Place fish in hot oil, cook 6 minutes, turning once. Making sure not to crowd skillet, cook in batches.
