The other day I went to Bradley Farmers Market, bought the zucchini, tomatoes and other vegetables. Go support the farmers if you can.
Zucchini Potato Skillet is an perfect side dish.
Zucchini Potato Skillet
Recipe by Christine Lamb @ Christine's Pantry - 2019
Ingredients:
2 potatoes, peeled and cut into half moons
1 zucchini, cut into half moons
1 tomato, chopped
salt and pepper
1 tablespoon italian seasoning
olive oil
shredded colby jack cheese
1 green onion, sliced
Directions:
Heat oil in skillet over medium heat. Add potatoes, salt and pepper. Cover, cook 3 minutes. Remove cover, turn potatoes.
Add zucchini, sprinkle with salt and italian seasoning, stir. Cook uncover for 5 minutes. Add tomatoes and green onions, sprinkle with salt, stir, cook additional 2 minutes. Sprinkle with cheese, cover until cheese melted.
