Potato Rounds with Cheese and Bacon

American horticulturist, Luther Burbank was born in Lancaster, Massachusetts on March 7, 1849.



Luther had an elementary education. Luther Burbank developed more than 800 strains and varieties of plants, including 113 varieties of plums and prunes, 10 varieties of berries, 50 varieties lilies, and the freestone peach. 

Wanting to improve the common Irish potato, Luther grew and observed 23 potato seedlings from an early rose parent. One seedling produced 2 to 3 times more tubers of a larger size than any other. His potato was introduced in Ireland to combat the blink epidemic. Burbank cultivated the strain and marketed Burbank (named after the inventor) potato to the farmers in the United States, in 1871. Later it was nicknamed the Idaho potato. 

Burbank sold the rights to the potato for $150.00, enough to travel to Santa Rosa, CA. There he established a nursery, greenhouse, and experimental farm that have famous through out the world.

Potato Rounds with Cheese and Bacon

Ingredients:
2 large potatoes cut into 1/2 inch slices
2 tablespoon butter, melted
salt and pepper, to taste
1/2 cup shredded cheddar cheese
1/4 cup real bacon bits
1/8 cup chopped chives

Directions:
Preheat oven to 400.

Brush both side of potatoes with butter, place potatoes on ungreased sheet pan. Sprinkle salt and pepper. Bake for 20 to 30 minutes, until potatoes are tender, turning once.

Once the potatoes are done, remove from oven, top with cheese and bacon bits. Place potatoes back into the oven, about 5 minutes, until cheese is melted. Sprinkle chives. Enjoy!
