Goji berries red berries that look like raisins. Goji berries have been used for 6,000 years by herbalist in China, India and Tibet.
Goji berries are rich in
antioxidants, particularly carotenoids such as beta carotene and zeaxanthin.
One of zeaxanthin's key roles is to protect the retina of the eye by absorbing
blue light and acting as an antioxidant. In fact, increased intake of foods
containing zeathanthin may decrease the risk of developing age related macular
degeneration, the leading cause of vision loss and blindness in people over the
age of 65.
Goji berries have a mild tangy taste
that is slightly sweet and sour. They have a similar shape and chewy texture as
raisins.

Ingredients:
1 (15.25 oz.) box super moist cake
mix devil's food
1 1/4 cup water
1/2 cup vegetable oil
3 eggs, beaten
1 teaspoon vanilla extract
3 ripe bananas or overripe, peeled
and mashed
1
cup goji berries or raisins
Directions:
Preheat
oven 350 degrees.
In a large bowl, add cake mix,
water, vegetable oil, eggs, vanilla extract, mashed bananas and mix. Fold in
goji berries.
Line regular muffin cups with paper cupcake liners. Fill the cups half full with batter. Bake for 15 to18 minutes, or when toothpick inserted in center comes out clean. Enjoy!
