Brown
sugar is crystalline sucrose combined with a small amount of molasses, which is
responsible for its brown color and rich flavor.
Brown
sugar is prized for its deep, rich flavor and color. Because molasses is hydroscopic,
baked goods made with brown sugar retain moisture well. Brown sugar also
contains a slightly higher mineral content than regular refined white sugar due
to the presence of molasses.
Light
brown sugar is the most common type of brown sugar used for baking. Recipes
that call for brown sugar without specifying either light or dark generally
require light brown sugar. Light brown sugar contains approximately 3.5%
molasses by weight.
You
can make brown sugar at home. How? Combining one tablespoon of molasses for
every cup of granulated white sugar. Stir the sugar and molasses together until
an even color and texture are achieved. Store the brown sugar in an air tight
container.

Ingredients:
2
tablespoons olive oil
2
boneless pork chops
salt
and pepper, to taste
1/2
teaspoon garlic powder
1/3
cup light brown sugar
3
tablespoons butter, melted
Directions:
Heat
oil in a skillet over medium high heat.
In
a small bowl, whisk brown sugar a melted butter. Set aside.
Season
both sides pork chops with salt, pepper and garlic powder. Place pork chops in
hot skillet, cook for 5 minutes, turn pork chops and pour glaze over pork
chops. Cook additional 5 minutes, until chops are brown and cooked through.
