Chicken Tetrazzini


 I like to know a little about the dish I'm making. This dish is named after a Italian opera star. It's believe that Chef Ernest Arbogast in California created this recipe. Other sources attribute the orgin in New York City. The chicken tetrazzini was made famous by Chef Louis Paquet. 

Ingredients : 
2 chicken breast, cooked and cut into bite size pieces 
salt and pepper to taste 
1 tablespoon minced garlic 
1 small onion, diced 
1 - 8 ounce can cream of chicken soup 
1/2  cup chicken broth 
1 cup sour cream 
4 ounces spaghetti 
8 ounce can mushroom, drained 
5 ounces mozzarella cheese, shredded 
1/2 stick butter 
parsley, garnish

Directions:
Cook pasta according tlo package directions. Drain well. 

In skillet over medium heat, melt butter, add onions, salt and pepper.  Add remaining ingredients except sour cream, pasta, cheese and parsley. Heat through. Add sour cream, pasta, cheese. Stir well. Garnish with parsley.

Garlic Butter Pork Bites


These Garlic Butter Pork Bites so easy to throw together and delicious. The meat lovers out there will love this recipe. You could serve this at a party, but a toothpick in each pork bite. 


Garlic Butter Pork Bites 
Recipe by Christine Lamb @ Christine's Pantry 
Ingredients:
1 pound pork for stew 
Salt and pepper, to taste
1/2 stick butter
4 tablespoons minced garlic 
1/4 cup chicken broth 
1 teaspoon olive oil 
1/2 teaspoon paprika 


Directions:

Heat oil in skillet over medium heat. Add season pork bites, cook until golden brown. Remove from skillet and set aside. Add butter and garlic, stirring for 1 minute. Add chicken broth, scraping brown bits from bottom of skillet. Add pork bites, stirring a minute, until  heated thru. Serve with green vegetables.

Aldi Grocery Haul

 

Hi everyone! Doing something different. Went to Aldi on this beautiful Sunday afternoon. Aldi was busy. I got potatoes, green onions, garden salad mix, egg rolls, refried beens, Aldi rotel, which I really like,  chicken broth, Italian dressing, brussel sprouts, broccoil and chicken fillets. 


I couldn't fit everything  in one picture. I have a small kitchen. As you can see I also got milk, gallon water, eggs, garlic, lunch meat and strawberry kiwi bunch, so good. My bill was $50 and some change.

Deep Fried Country Style Pork Ribs



Fried pork is wonderful, like fried chicken. Fried pork is less common cooking method than smoking or grilling, but common in other parts of the world. The ribs come together quickly and very yummy. Deep Fried Country Style Pork Ribs

Ingredients 

1 pound country style pork ribs, cut into pieces 

salt and pepper to taste 

1 teaspoon garlic powder 

1 teaspoon paprika 

2 eggs beaten

1/4 cup panko bread crumbs 

vegetable oil


Directions 

Heat oil to 350 degrees. Salt, pepper and add garlic powder to both sides of meat. In a dish add eggs and pinch of black pepper and 1/4 teaspoon water, whisk. In separate dish, add panko bread crumbs and paprika, stir. Dip pork into egg mixture than dip into bread crumbs. Cook in oil about 4 to 5 minutes, until golden brown.

Tennessee Style Potato Salad For Two


 

There are many ways to make potato salad, but if your looking for a mayonnaise egg base salad, you've come to the right place. This is an easy yummy salad. I think you will like this. 


Tennessee Style Potato Salad For Two 

Recipe by Christine Lamb @ Christine's Pantry 

Ingredients:

2 cooked russet potatoes, chopped
2 hard boiled eggs, peeled and chopped
2 tablespoons red bell pepper, finely chopped 
2 tablespoons white onion, finely chopped 
1 teaspoon dell relish
1 tablespoon mayonnaise 
1 tablespoon sour cream
Salt and pepper to taste
1/2 teaspoon garlic powder
1/4 teaspoon yellow mustard 

Direction:
Add cooked potatoes to a medium size bowl and the rest of the ingredients. Gently mix all ingredients together. Cover and chill, untill ready to serve.
