Bacon and Egg Quesadillas

Many food historians believe onions originated in Asia. Other research shows onions first grown in Iran and Pakistan. Green onions, are also known as spring onions and scallions. The flavor is mild, and the entire onion is used except the root. 

Onions have been cultivated for 5000 years or longer. In various regions, onions grew wild. Onions less perishable than other food of the time. Easy to transport and easy to grow. They grow in a variety of soil and climate. 



Crispy, pan fried tortillas stuff with bacon, eggs, cheese and green onions. Perfect easy breakfast.

Bacon and Egg Quesadillas
Recipe by Christine Lamb @ Christine's Pantry - 2020

Ingredients:
4 slices bacon, cooked and crumble
4 eggs, slightly beaten
1/4 teaspoon water
salt and pepper
1 cup colby cheese, shredded
2 green onions, sliced
4 - 8 inch flour tortillas 

Directions:
In a small bowl, whisk together eggs, water, salt and pepper. Spray small skillet with non stick cooking spray. Pour egg mixture into skillet over low heat, until cooked. 


Top half of each tortilla with, cheese, egg, cooked bacon and green onions. Fold tortilla over filling, gently pressing down with spatula. 

Spray large skillet with non stick cooking spray. Heat skillet over medium heat. Place 2 quesadillas in skillet at the same time, cook 3 or 4 minutes, turning once, until gold brown and cheese melted. Cut into wedges.
