Kielbasa with bell peppers and zucchini makes an awesome one skillet meal.
I like a meal that only dirties one skillet, as much as I like my home to be clean, still not a fan of cleaning dishes. This also kid friendly. You can use Italian sausage, turkey sausage depending on what you like.

Sausage with bell peppers, zucchini and potatoes is great meal for weeknights.
Sausage and Veggie Skillet
Recipe by Christine Lamb @ Christine's Pantry - 2019
Ingredients:
1 tablespoon olive oil
1 tablespoon butter
7 ounces kielbasa, cut into 1 inch pieces than cut into half moon
1 small zucchini, cut into half moon
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 small onion, chopped
1 cup yellow potato, diced
1 teaspoon roasted garlic herb seasoning
1 teaspoon onion powder
1 teaspoon seasoned salt
salt and pepper
1 green onion, sliced
Directions:
Heat oil and melt butter in skillet over medium heat. Add potatoes, season with seasoned salt and black pepper. Stir and cook until tender. Remove from skillet and set aside.
In same skillet add sausage. Cook until golden brown. Remove from skillet and set aside.
In same skillet add bell peppers, onions and zucchini, season with roasted garlic herb seasoning, onion powder and salt. Stir and cook until tender. Add potatoes and sausage back to the skillet. Add green onion. Heat through. Serve.
