Make this hash even heartier by adding a fried egg on top or scramble egg on the side.
Red Potato and Italian Sausage Hash

Ingredients:
1 pound petite red potatoes, cut in half
1 small onion, diced
5 italian sausage links
salt and pepper
1 teaspoon garlic powder
1 green onion, sliced
Directions:
Place potatoes in saucepan, cover potatoes with water, add plenty of salt. Bring to boil and cook until fork tender. Drain and return to pot. Set aside.
Meanwhile, cook sausage according to package directions. When cool to touch, slice.
Place cooked potatoes and onions in skillet, cook about 8 to 10 minutes, until golden brown. Add cooked italian sausage, garlic powder, salt and pepper, heat through. Garnish with green onions.
