Sausage and Pepper Quesadillas are filled with onions and bell pepper. And lots of italian sausage. Love quesadillas for lunch or dinner.
Quesadillas are always a hit around here for lunch or dinner. They also make a great appetizer for a party. You pretty much clean out your refrigerator and place between two tortillas and add as much cheese as you like and your good to go.
We've tried so many different types of quesadillas, but sausage and pepper is high on the list. If you like sausage and pepper sandwich, you have to tried this recipe.
Sausage and Pepper Quesadillas

Ingredients:
1 pound ground italian sausage
1 tablespoon olive oil
1 white onion, chopped
1 large green bell pepper, seeded and diced
salt and pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1 tablespoon butter
2 cups colby jack cheese, shredded
6 - 10 inch flour tortillas
Directions:
Add olive oil to skillet over medium heat, add sausage until no longer pink. With slotted spoon remove sausage to a bowl and set aside. Leaving the oil in skillet.
Add onions and bell peppers to skillet. Add butter. Season with salt, pepper, garlic powder and paprika. Stir and cook until tender about 10 minutes.
Remove onions and peppers to bowl with sausage.
In same skillet over medium heat, add one tortilla. Top with sausage mixture, add cheese. Top with another flour tortilla, than press down with plate. Cook 3 to 4 minutes, flip and cook another 3 to 4 minutes until golden brown. Remove to cutting board. Continue with remaining quesadillas.
Cute into 4 or 6 slices and serve.
