I took a little help from the grocery store, I bought a rotisserie chicken. So I thought I would use some of the rotisserie chicken and make this favorite for us and share it with you. You can use this as a main dish or a side dish.
I wish I could make this Chicken Rice Skillet for YOU! I really wish I could. It so easy and so good.

Chicken Rice Skillet
Recipe by Christine Lamb @ Christine's Pantry - 2019
Ingredients:
1 tablespoon olive oil
1 tablespoon butter
2 cups rotisserie chicken, chopped
1 cup cooked white rice
1 small white onion, chopped
1/2 orange bell pepper, chopped
salt and pepper
1 - 10 oz. can cream of mushroom soup
2 cloves garlic, minced
handful shredded colby jack cheese, or use your favorite cheese
1 green onion, chopped for garnish
Directions:
In large skillet, heat oil over medium heat. Add bell pepper, white onions, salt and pepper. Cook until tender. Add remaining ingredients except cheese and green onions. Stir and heat through. Turn heat off, add cheese and green onions. Serve.
